It depends on what era he is a knight in. If he is a Code Geass knight, then he uses a knightmare. If he is a medieval knight, then he wears incredible heavy armor.

Diabolo was also rather good. Also rather short, so it can be finished in an hour ish, depending on how fast you read. Three chapters.

If ur list is updated and uve still not watched them, then from it i have to recommend, Full Metal Panic (for all its lolz), Cowboy Bebop and Elfen Lied (for being awesome)
If u want a completely new series then go for Tiger & Bunny. Heres is a wiki plot to get explain the plot
"The series takes place in the future" in a fictional, re-imagined New York City , where superpowered individuals known as "NEXT" started appearing and some of them became superheroes. Each of the city's most famous superheroes work for a sponsor company and their uniforms also contain advertising for real-life companies. Their heroic activity is broadcast on the popular television show "Hero TV", where they accumulate points for each heroic feat accomplished (arresting criminals or saving civilians, for example) and the best ranked hero of the season is crowned "King of Heroes"."
Its very good and though the plot seems weird its done well and the characters are good. It was a one shot so there is no manga for it and its currently 1-25 eps long. I think its a very good anime considering its not based on a manga
